This classic homemade brittle delivers that perfect snap with buttery caramel and loads of toasted Brazil nuts. Its a crowd-pleasing treat for holidays, gifting, or just satisfying a sweet-crunch craving. The Geedel Rotary Cheese Grater makes prepping the nuts quick and consistentno uneven chopping needed.

🍯Ingredients

1 cup Brazil nuts (raw or lightly toasted)

1 cup granulated sugar

½ cup light corn syrup

½ cup water

¼ cup unsalted butter

1 tsp vanilla extract

½ tsp baking soda

Pinch of sea salt (optional, for extra contrast)

🔥Step-by-Step Instructions

Line a large baking sheet with parchment paper or a silicone mat and set it nearby.

Use the cheese grater hand crank with the crushing blade to process the Brazil nuts. Crank steadily until you have a mix of fine crumbs and small chunky pieces (ideal for brittle textureavoid turning them into a paste). You should end up with about ¾ cup of prepared nut pieces. Set aside.

In a heavy-bottomed saucepan over medium heat, combine sugar, corn syrup, and water. Stir gently until the sugar dissolves, then stop stirring.

Attach a candy thermometer and cook the mixture until it reaches 300°F (hard-crack stage), about 812 minutes. The syrup will turn golden amber.

Remove from heat immediately. Quickly stir in butter, vanilla, and baking sodathe mixture will foam up vigorously.

Stir in the Brazil nut pieces until evenly coated.

Pour the hot mixture onto the prepared baking sheet. Use a heatproof spatula to spread it into an even layer (about ¼-inch thick). Sprinkle with a pinch of sea salt if desired.

Let cool completely at room temperature (3045 minutes). Once hardened, break into shards with your hands or a knife.

🍫Variations to Try

Spicy Kick  Add ½ tsp cayenne or chili powder with the nuts.

Chocolate Drizzle Melt dark chocolate and drizzle over cooled brittle before it fully sets.
