Apple-Yam Puree with Maple-Walnut Crumble
In the pursuit of a healthy autumn/winter lifestyle, a warm, smooth, guilt-free dessert is my absolute favorite. This Apple-Yam Puree combines Eastern ingredients with Western flavors, and I have my Geedel vegetable chopper to thank for making the yam and apple preparation safe and efficient!
Ingredients:
- 1 Chinese yam (about 300g)
- 2 apples (Granny Smith recommended)
- 1 tbsp maple syrup
- 1/2 tsp cinnamon powder
- 30g walnuts
- 1 tbsp butter
Instructions:
1.Wash and peel yam and apples.
Note: Wear gloves when handling yam to prevent skin irritation.
Use the Geedel slap chopper with julienne blade to cut yam into thick strips, then repeat with apples. This method makes cooking faster and mashing easier than steaming whole pieces.
2.Place yam and apple strips in a steamer basket.Steam over high heat for 15-20 minutes until tender enough to pierce with a chopstick.
3.Transfer cooked strips to a large bowl. While still hot, mash with a potato masher or fork until smooth.
4.Stir in maple syrup and cinnamon powder until well combined. Taste and adjust sweetness if needed.
5.Make walnut crumble:
Melt butter in a small saucepan over low heat. Add chopped walnuts and toast for 2-3 minutes until fragrant. Drizzle with a little extra maple syrup for a caramelized finish.

6.Spoon warm puree into serving bowls and top with crispy maple-walnut crumble. Enjoy warm or refrigerated - both are delicious!
