Cheese & Ham Stuffed Chicken Rolls
Transform ordinary chicken breasts into an impressive main course—tender chicken wrapped around savory ham and melted cheese, coated in a golden, crispy herb breadcrumb crust. With herb breadcrumbs quickly prepared using the Geedel vegetable chopper, this dish goes from prep to table in just 40 minutes, delivering restaurant-quality results.

Ingredients:
Main: 2 large chicken breasts, 4 slices ham, 4 slices Swiss cheese
Herb Breadcrumb Coating: 1 cup breadcrumbs, 2 tbsp grated Parmesan cheese, 2 tbsp fresh parsley, 1 garlic clove, 1 tsp lemon zest, ½ tsp salt, ¼ tsp black pepper, 3 tbsp melted butter

Instructions:
1. Prepare Herb Breadcrumbs (using Geedel):
- Chop parsley and garlic into chunks. Fit the chopping blade into your hand vegetable chopper.
- Add parsley and garlic to the container; press gently 3-4 times until finely and evenly minced.
- In a shallow dish, combine breadcrumbs, Parmesan, herb-garlic mixture, lemon zest, salt, and pepper. Drizzle with melted butter and mix with a fork until well combined.
2. Prepare Chicken:
- Butterfly each chicken breast by slicing horizontally through the thickest part without cutting all the way through, open like a book.
- Gently pound with a meat mallet to an even ½ cm thickness.
- Place 2 slices of ham and 2 slices of cheese onto each chicken breast. Roll tightly from the short side and secure with toothpicks.
3. Coat the Chicken Rolls:
- Lightly dredge each roll in flour, shaking off excess.
- Dip into beaten egg, allowing excess to drip off.
- Finally, press evenly into the prepared herb breadcrumb mixture, coating thoroughly.
4. Bake:
- Preheat oven to 200°C (400°F).
- Place a wire rack on a baking sheet and lightly grease with oil.
- Arrange chicken rolls on the rack; spray or brush tops lightly with oil.
- Bake 25–30 minutes until golden brown and crispy, and internal temperature reaches 74°C (165°F).
5. Serve:
- Let rest 5 minutes. Remove toothpicks and slice into thick pieces to reveal the beautiful layers of melted cheese and ham.
- Serve with mashed potatoes and roasted vegetables.
