2 medium carrots

1 small red bell pepper

3 green onions (scallions), thinly sliced

¼ cup rice vinegar

2 tbsp sesame oil

1 tbsp honey or maple syrup

1 tsp toasted sesame seeds

Salt & freshly ground black pepper to taste

Prep the veggies

Rinse and peel the daikon radish and carrots. Trim ends from the red bell pepper and remove seeds.
