Truffle Cheese Croquettes – Geedel

Truffle Cheese Croquettes

The moment the golden crispy shell collapses between your teeth, the creamy mashed potatoes, wrapped in fine shavings of Parmesan cheese, burst forth. The woody aroma of truffle oil climbs into your nostrils, and the pungent spiciness of black pepper adds the finishing touch at the end -- this luxurious treat, costing only $0.5 per piece, outshines the appetizers of high-end restaurants!

To awaken this crispy luxury, you'll need the following ingredients:

Yellow potatoes: 500g, steamed, mashed and sieved.

Parmesan cheese: 100g, grated into fine shavings with a drum grater.

Truffle oil: 1 teaspoon.

Cooking Steps:

Step 1. Cheese Avalanche (4 minutes): Grate Parmesan cheese into snowflake-like fine shavings using a rotary cheese grater (the tool’s rotating blades create shavings that melt 3 times faster than pre-grated cheese, blending seamlessly with mashed potatoes).

Step 2. Mashed Potato Fusion (2 minutes): Mix mashed potatoes + cheese shavings + truffle oil well, then refrigerate for 30 minutes.

Step 3. Frying and Shaping (3 minutes per batch): Scoop the mixture into balls with an ice cream spoon, coat with breadcrumbs, and fry at 180°C until amber gold.

Tips:

Freshly grated cheese shavings from a rotary grater have higher moisture content, which binds more closely with the mashed potato -- no dry, crumbly texture here!
