Hungarian Gulyás Beef Stew with Egg Noodles

Ingredients (Serves 6)

- 500g beef brisket (cut into 2cm chunks)

- 2 carrots (peeled)

- 2 celery stalks (leaves removed)

- 1 onion (peeled)

- 1 can (400g) canned tomatoes

- 2 tbsp Hungarian sweet paprika

 - 300g dry egg noodles

- 800ml beef stock

- 4 garlic cloves (minced)

- 25g butter

- 1.5 tsp salt

- 1 tsp crushed black pepper

Detailed Instructions

1.Chop vegetables with Geedel

Cut carrots and celery into thick chunks, place in the Geedel vegetable chopper, and spin clockwise to make thin strips. Halve the onion, put it in the food chopper, and spin into dice. This vegetable chopper produces uniformly sized strips and dice that cook evenly, softening at the same rate and fully absorbing meat and spice flavors. Use the salad spinner to gently dry the vegetables’ surface—prevents the stew from becoming too watery.

2.Sauté and braise

Melt butter in a large pot. Sear beef brisket chunks until golden brown on the surface, then remove and set aside. Leave the remaining oil in the pot, sauté onion dice and minced garlic until fragrant. Add Hungarian paprika and stir-fry for 1 minute (avoid burning). Pour in canned tomatoes (crushed), carrot strips, and celery strips, stir-fry for 2 minutes. Add beef stock, salt, and crushed black pepper, then return the seared beef to the pot. Bring to a boil over high heat, then reduce to low heat and simmer for 1.5 hours until the beef is tender and the sauce thickens.

3.Cook noodles and serve

Cook dry egg noodles in a separate pot until al dente (80% cooked). Drain thoroughly, add to the gulyás stew, and stir-fry for 1 minute to coat the noodles with the thick sauce. Serve sprinkled with a little fresh chopped parsley. The rich meat aroma blends perfectly with the unique flavor of paprika—Hungarian families’ favorite winter staple!
