American Ranch Chicken Salad

A classic favorite for summer picnics or winter lunchboxes, this traditional ranch chicken salad often requires tedious hand-chopping of vegetables. The Geedel Food Chopper processes celery, onion, and herbs in minutes, bringing this family classic back to the table with ease.

Ingredients:  

3 chicken breasts (cooked and diced)  

3 celery stalks  

½ red onion  

1 cup red grapes, halved  

½ cup toasted walnuts, chopped  

¾ cup mayonnaise  

¼ cup sour cream  

2 tablespoons fresh dill  

1 tablespoon fresh parsley  

1 teaspoon Dijon mustard  

Salt, black pepper, lemon juice  

Instructions:  

1. Prepare vegetables (using Geedel):  

   Wash and cut the celery and red onion into sections. Using the Geedel Hand Vegetable Chopper with the dicing blade, place celery sections in the container and press evenly 4–5 times until finely and uniformly diced. This manual chopper ensures consistent vegetable pieces for a harmonious salad texture. Repeat with the red onion.

2. Prepare herbs:  

   Switch to the chopping blade. Place fresh dill and parsley in the container and press lightly 2–3 times until finely chopped.

3. Make the ranch dressing:  

   In a large bowl, combine mayonnaise, sour cream, Dijon mustard, chopped herbs, 1 tablespoon lemon juice, salt, and black pepper. Mix until smooth and well blended.

4. Combine the salad:

   Add the diced chicken, diced celery and onion, halved grapes, and toasted walnuts to the dressing. Gently fold with a rubber spatula or spoon until all ingredients are evenly coated.

5. Chill to meld flavors:

   Cover with plastic wrap and refrigerate for at least 1 hour to allow the flavors to develop. Overnight chilling yields even better results.

6. Serve:

   Enjoy as a stand-alone salad, spread between whole-wheat bread for a sandwich, or scooped onto lettuce leaves as lettuce wraps. Pair with fresh fruit and chips for a complete lunch.
