Northern Italian Asparagus & Mushroom Risotto

On a busy Monday noon in Milan, the Geedel Vegetable Chopper helps you prep all risotto ingredients in just 15 minutes—no more wasting precious asparagus tips. Ingredients  

80g Arborio rice (Italian risotto rice)  

6 asparagus spears  

4 white mushrooms  

1/4 onion  

1 garlic clove  

30g grated Parmesan cheese  

2 tbsp white wine  

200ml chicken broth  

1/4 tsp salt  

A pinch of black pepper  

10g butter  

Instructions  

1. Cut Asparagus & Mushrooms: Uniform Prep with the Vegetable Slicer  

Wash the asparagus and trim off the tough ends. Cut into 5cm segments, keeping the tender tips intact. Load into the Geedel Vegetable Chopper in vegetable slicer mode (wide blade). Press once—asparagus cuts into neat, even segments with no waste. Transfer to the container.  

Slice the mushrooms, then switch to the fine blade to dice finely. Keep mushrooms and asparagus separate.

2. Sauté the Base: Quick & Flavorful

Melt butter in a skillet. Add finely chopped onion (prepped with Geedel fine blade) and minced garlic. Sauté for 30 seconds until fragrant. Add diced mushrooms and cook for 2 minutes until softened. Pour in white wine and cook for 1 minute to evaporate the alcohol. Stir in Arborio rice and cook for 1 minute until grains are translucent and coated.

3. Simmer the Risotto: A Busy Worker’s Method  

Add chicken broth in three parts (one-third at a time, stirring until absorbed before adding more). Simmer over low heat for 12 minutes. In the last 2 minutes, add asparagus segments and cook until bright green and tender. The rice should be creamy yet al dente—the classic Italian texture. Season with salt and pepper. Turn off the heat, stir in Parmesan, cover, and rest for 1 minute.
