Southwestern Beef Rice Bowl

Want a healthy, colorful, and customizable dinner? This Southwestern-style beef rice bowl has it all. Everyone can mix and match toppings to their liking, and the key to easy prep is using the Geedel vegetable chopper to quickly handle large quantities of fresh vegetable toppings.

Ingredients:

For the Mexican Rice:

2 cups white rice  

4 cups chicken broth  

1 can (140g) diced green chilies  

¼ cup chopped cilantro  

1 tablespoon lime juice  

For the Seasoned Beef:

500g ground beef  

1 packet taco seasoning  

½ cup water  

Toppings (choose as desired):  

1 tomato  

1 avocado  

¼ red onion  

1 ear of corn (or 1 cup frozen corn kernels)  

1 can black beans, drained  

1 cup shredded cheddar cheese  

Sour cream  

Salsa  

Lime wedges  

For the Guacamole (using Geedel):

2 ripe avocados  

¼ red onion  

1 tomato  

¼ cup cilantro leaves  

Juice of 1 lime  

Salt  

Instructions:  

1. Prepare guacamole ingredients (using Geedel):

   Cut the red onion and tomato into chunks. Using the hand vegetable chopper with the dicing blade, place the red onion chunks in the container and press lightly 3–4 times to get fine dice. Repeat with the tomato. This food chopper handles small batches quickly, making it perfect for sauces and dips.

2. Make the guacamole:  

   In a bowl, mash the avocado flesh into a coarse paste. Add the diced onion, diced tomato, cilantro leaves, and lime juice. Season with salt and mix gently, keeping some texture.

3. Prepare remaining toppings:  

   Use the dicing blade to dice the tomato and red onion (for fresh toppings). Switch to the chopping blade to chop cilantro. If using fresh corn, cut the kernels off the cob and set aside.

4. Cook the rice:

   In a pot, combine the rice, chicken broth, and diced green chilies. Bring to a boil, then reduce heat, cover, and simmer for 15–20 minutes until the liquid is absorbed. Remove from heat and stir in cilantro and lime juice.

5. Cook the beef:  

   In a skillet, brown the ground beef. Add taco seasoning and water, and cook for 5 minutes until the sauce thickens.

6. Assemble and serve:  

   Let everyone start with a base of Mexican rice in a large bowl. Top with seasoned beef, then add desired toppings: black beans, corn, diced tomato, diced red onion, guacamole, sour cream, cheese, and salsa. Serve with lime wedges for squeezing
