Texas' traditional party snack "Cowboy Caviar" is actually a flavorful bean salad. This healthy dish works perfectly as a dip for chips or a side salad, and is always a hit at family gatherings or outdoor barbecues. Ingredients:  

2 cans (400g each) black beans, drained and rinsed  

2 cans (400g each) sweet corn kernels, drained  

1 red onion  

1 green bell pepper

2 tomatoes  

1 jalapeño pepper (optional)  

½ cup fresh cilantro  

For the Dressing:  

¼ cup olive oil  

¼ cup lime juice  

1 teaspoon ground cumin  

1 teaspoon chili powder  

½ teaspoon salt  

¼ teaspoon black pepper  

For Serving:  

Tortilla chips, lettuce leaves, or as a side dish  

Instructions:  

1. Prepare the vegetables (using Geedel):  

   Wash and seed the red onion, bell peppers, and tomatoes. Using the Geedel vegetable chopper with the dicing blade, halve the red onion and place in the container. Press lightly 4–5 times until finely and uniformly diced. Repeat with the green bell pepper, red bell pepper, and tomatoes. 2. Prepare the jalapeño (if using):  

   Seed and finely chop the jalapeño (wear gloves if desired).

3. Combine the salad:

   In a large bowl, mix the drained black beans, corn, all diced vegetables, and chopped cilantro.

   In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and black pepper until emulsified.

5. Marinate:

   Pour the dressing over the salad and toss gently. Cover with plastic wrap and refrigerate for at least 2 hours (preferably overnight) to let the flavors meld.

6. Serve:  

   Spoon into bowls and serve with tortilla chips for dipping, scoop onto lettuce leaves for salad cups, or enjoy as a side with grilled meats. This salad can be stored in the refrigerator for 3–4 days.
