Korean Vegetable Pancake

Rainy weekend evenings are perfect for making crispy-on-the-outside, tender-on-the-inside Korean pancakes loaded with fresh veggies. Watching the batter sizzle in the pan, a sense of happiness wells up instantly. Prep work for various shredded vegetables is no longer a hassle—your Geedel vegetable chopper gets it all done in the blink of an eye.

Ingredients:

- 1/2 zucchini

- 1/4 carrot

- 1/4 onion

- 2 green onions (scallions)

- 1 cup all-purpose flour

- 1 egg

- 3/4 cup ice water

- Salt and cooking oil (to taste)

Instructions:

Step 1: Attach the Blade & Prep Vegetables

Fit your  vegetable chopper with the cross chopping blade. Cut the zucchini, carrot, and onion into large chunks that fit easily through the chopper's feeding chute.

Step 2: Chop Efficiently

Place the vegetable chunks into the chopper container, secure the lid tightly. Hold the base steady with one hand and keep turning the handle with the other. Check through the transparent lid until all vegetables are chopped into uniform pieces. This manual vegetable chopper truly shines when handling onions—it lets you avoid the spicy irritation completely.

Step 3: Make the Basic Batter

In a large mixing bowl, combine the all-purpose flour, egg, ice water, and a pinch of salt. Stir with chopsticks or a whisk until the batter is smooth and free of lumps. 

Step 4: Mix Filling Uniformly

Fry over medium-low heat until one side sets and the edges turn slightly browned, then flip. Fry until both sides are golden and crispy before serving.
