Southern Shrimp and Grits

Creamy, smooth grits topped with shrimp cooked in a savory sauce of bacon, sausage, and spicy seasonings represent a luxurious Southern breakfast or brunch classic. Ingredients:  

- For the grits: 1 cup coarse corn grits, 4 cups water or broth, ½ cup shredded cheddar cheese, 2 tbsp butter, salt, and pepper  

- For the shrimp sauce: 300g shrimp, 4 bacon slices, ½ onion, ½ green bell pepper, 2 garlic cloves, 1 cup chicken broth, 1 tsp smoked paprika, lemon juice, chopped green onions

Instructions:

1.Prepare the vegetable base for the sauce:

2.Cook the shrimp sauce:

Fry bacon in a skillet until crisp, then remove and chop. Sauté the minced vegetables in the bacon fat, add smoked paprika, then pour in chicken broth and bring to a boil. Add shrimp and cook until pink and cooked through. Finish with a squeeze of lemon juice.  

3.Make the grits:

Cook grits according to package instructions until thick and smooth. Off the heat, stir in cheese and butter (using the mixing paddle or manually) for a creamier texture.  

4.Assemble:

Spoon grits into bowls, top with shrimp and sauce, and garnish with crumbled bacon and green onions.
