Estonian Cod and Vegetable Porridge

In fishing port families of Tallinn,Estonia, this cod and vegetable porridge is a representative fresh and smooth staple! Prep cod and vegetables practically with the Geedel manual food chopper. The porridge is thick and creamy, combining the freshness of cod with the natural sweetness of vegetables—nutritious and easy to digest, perfect for the elderly and children!

Ingredients (Serves 6)

- 300g fresh cod (skinless, boneless, cut into small chunks)

- 200g rice (soaked in advance for 30 minutes)

- 1 carrot (peeled)

- 1 celery stalk (leaves removed)

- 1/2 onion (peeled)

- 800ml chicken stock

- 200ml milk

- 20g butter

- 1 tsp salt

- 1/2 tsp crushed black pepper

- 15g fresh dill (chopped)

Detailed Instructions

1.Prep ingredients with Geedel

Cut cod into small chunks, place in the food chopper, and spin into fine dice. Marinate with a pinch of salt and black pepper for 10 minutes. Cut carrot and celery into chunks, spin into thin strips. Halve the onion and spin into fine dice.

2.Sauté & simmer porridge

Melt butter in a large pot. Sauté onion dice until fragrant, add carrot strips and celery strips, stir-fry for 3 minutes. Add soaked rice and stir-fry for 1 minute until the rice grains turn translucent. Pour in chicken stock, bring to a boil over high heat, then reduce to low heat and simmer for 20 minutes until the rice is tender. Add milk and marinated cod dice, continue cooking for 5 minutes until the cod is fully cooked.

3.Season & serve
