German Winter Root Vegetable & Sausage Shred Stew

On a chilly Munich evening, the Geedel Vegetable Processor helps create a classic German stew in just 20 minutes—shredding winter roots evenly, using the salad spinner to prevent sogginess, and whisking a rich broth. The hearty aroma fills your home, naturally gathering everyone to the table.

Ingredients (Serves 3)  

3 Bratwurst sausages (sliced into thick rounds)  

1 parsnip (peeled)  

1 carrot  

1 celery stalk (leaves removed)  

½ onion  

1 medium potato (peeled)  

400ml beef broth  

50g sauerkraut (drained)  

¼ tsp salt  

A pinch of black pepper  

1 tsp chopped parsley (for garnish)  

Instructions  

1. Shred the Vegetables: Fast & Even  

Cut the parsnip, carrot, celery, onion, and potato into 3cm chunks. Load them into the Geedel Vegetable Processor and rotate five times—parsnip turns into creamy-white strips with a nutty note, carrot into bright orange shreds, celery into pale green strands, onion into soft slices, and potato into tender yellow shreds. Uniform shreds cook evenly and soak up the rich sausage flavors.

2. Dry the Shreds: Keep the Stew Rich  

Transfer parsnip, carrot, and celery shreds to the Geedel Salad Spinner and spin for 10 seconds. Removing surface moisture ensures a thick, flavorful stew that clings to the sausage and vegetables.

3. Sear & Simmer: Deep & Smoky Flavors

Heat 1 tsp olive oil in a pot. Sear the Bratwurst slices until lightly browned, then set aside. In the same pot, sauté onion shreds for 3 minutes until fragrant. Add the dried vegetable shreds and stir-fry for 2 minutes. Mix in sauerkraut and beef broth. Bring to a boil, then simmer for 15 minutes until vegetables are tender. Return the sausage to the pot and cook for 5 more minutes. Season with salt and pepper.

4. Thicken the Broth: Smooth & Rich  

Mix 2 tbsp stew broth with 1 tsp cornstarch. Clean the Geedel container, add 100ml broth and the cornstarch mixture, then blend with the liquid whisk for 15 seconds until smooth. Stir back into the stew and simmer for 2 minutes—the broth will thicken beautifully, coating every ingredient.
