Bacon Cheeseburger Potato Skins

Ingredients:
4 large baking potatoes
8 slices bacon
300g ground beef
1 small onion
1 tomato
1 cup shredded cheddar cheese
¼ cup chopped pickles
¼ cup Thousand Island dressing
2 tablespoons olive oil
Salt, black pepper, smoked paprika
Chives (for garnish)
Detailed Steps:
1. Prepare the potatoes:
Preheat oven to 200°C. Thoroughly wash and dry the potatoes. Prick the surfaces with a fork. Brush with olive oil and sprinkle with salt. Place directly on the oven rack and bake for 50–60 minutes until a knife inserts easily.

2. Prepare toppings (using Geedel):
While the potatoes bake, prepare the toppings. Using the manual food chopper with the dicing blade, chop the onion into chunks and pulse 3–4 times for fine dice. Repeat with the tomato. Set aside separately.
3. Cook the meat:
In a skillet, cook the bacon until crispy. Remove and drain on paper towels. Reserve 1 tablespoon of bacon fat. In the same skillet, cook the ground beef until fully browned. Add the diced onion and cook until softened. Season with salt, black pepper, and smoked paprika.
4. Prepare the potato skins:
Let the baked potatoes cool slightly, then halve lengthwise. Carefully scoop out most of the potato flesh (reserve for other uses), leaving about 0.5 cm of skin. Brush the inside and outside of the skins with the reserved bacon fat and place cut-side up on a baking sheet.
5. Fill and bake:
Layer the beef-onion mixture into each potato skin, top with shredded cheese, and sprinkle with crumbled bacon. Bake for 10–12 minutes until the cheese is fully melted.
6. Garnish and serve:
Remove from the oven and immediately top with diced tomato, chopped pickles, and chives. Drizzle with Thousand Island dressing. Serve hot for a crispy exterior and richly layered filling.
