Grilled Pineapple Chicken Hawaiian Bowl
Bring the sunshine of Hawaii to your table with a vibrant, tropical plate lunch bowl. Sweet and spicy grilled chicken thighs, caramelized roasted pineapple, paired with refreshing vegetables and rice, create a nutritious and flavorful meal. Ingredients:
For the chicken and sauce:
2 boneless chicken thighs
1 cup of your favorite barbecue sauce (or homemade, see Recipe 67)
1 tablespoon soy sauce
1 garlic clove
For roasted pineapple:
1 cup fresh pineapple chunks
For sides:
2 cups cooked white rice or brown rice
1 cucumber
1 carrot
Handful of cilantro
2 limes
For quick pickling liquid:
2 tablespoons rice vinegar
1 tablespoon sugar
1/2 teaspoon salt
Instructions:
1. Prepare flavorful barbecue marinade:
Install the chopping blade in your Geedel manual food chopper and finely chop the garlic.
Switch to the mixing paddle. Add barbecue sauce and soy sauce. Close the lid and turn the handle to mix well.
Marinate the chicken thighs in the sauce for at least 30 minutes. Meanwhile, skewer or place pineapple chunks on a baking tray.

2. Prepare crisp vegetable salad:
Cut cucumber and carrot into large pieces. Use the shredding blade to process into fine strips. Place in the salad spinner basket and quickly turn the handle to remove excess moisture.
Mix rice vinegar, sugar, and salt to create a quick pickling liquid. Pour over the shredded vegetables and let sit for 10 minutes.
3. Cook the main components:
Bake the marinated chicken thighs and pineapple in a preheated oven at 200°C, or pan-fry the chicken thighs. Bake/pan-fry the chicken for about 20–25 minutes until cooked through, and roast the pineapple for 10–15 minutes until edges are slightly caramelized.
Slice the cooked chicken into pieces.
4. Assemble the bowl:
Place rice at the bottom of a bowl. Arrange sliced barbecue chicken, roasted pineapple chunks, and pickled vegetable strips on top.
Sprinkle with chopped cilantro and squeeze fresh lime juice over before serving.
