Lemon Poppy Seed Muffins
A moist, fluffy, and refreshingly lemon-scented muffin is always a delight for breakfast or afternoon tea. Your Geedel vegetable chopper plays a secret role here: it grates lemon zest finely and perfectly blends the wet ingredients, ensuring an even, delicate crumb.
Ingredients:
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup granulated sugar
Zest and juice of 2 lemons (about 1/4 cup juice)
2 large eggs
1 cup plain yogurt or sour cream
1/2 cup melted unsalted butter
2 tbsp poppy seeds
Instructions:
1.Make Lemon Sugar & Wet Ingredients:
Place the sugar and the zest of one lemon (using only the yellow part) into the Geedel food chopper fitted with the chopping blade. Secure the lid and turn the handle rapidly a few times to thoroughly combine the zest with the sugar, creating fragrant lemon sugar.
Transfer the lemon sugar to a large bowl. Clean the container and attach the mixing paddle. Add the eggs, yogurt, melted butter, and lemon juice to the container. Secure the lid and turn the handle until the mixture is smooth and well emulsified.

2.Combine Wet & Dry Ingredients:
To the bowl with the lemon sugar, add the flour, baking powder, baking soda, and salt. Whisk together with a fork until well combined.
Pour the wet ingredients into the dry ingredients. Gently fold together with a spatula or the mixing paddle just until no dry flour remains. Do not overmix.
Fold in the poppy seeds.
3.Bake:
Divide the batter among a muffin tin lined with paper cups, filling each about 2/3 full. Bake in a preheated oven at 200°C for 5 minutes, then reduce the temperature to 180°C and continue baking for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
4.Cool & Serve:
Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Conclusion
The secret to the flavor and texture of these seemingly simple muffins lies in the details. The Geedel chopper not only creates intensely flavored lemon sugar, but its mixing function also ensures perfect emulsification of the wet ingredients—the foundation for moist, fluffy cakes, giving your baking a professional touch from the inside out.
