Mexican Chicken Quesadillas

A quick and delicious dinner solution for busy weeknights, these Mexican-style chicken quesadillas are always a family favorite. My Geedel Vegetable Chopper prepares all the fresh ingredients in just minutes, turning an ordinary weekday dinner into an exotic delight.

Ingredients:

4 large flour tortillas  

2 chicken breasts (cooked and shredded)  

1 red bell pepper  

1 green bell pepper  

1 onion  

1 can black beans (drained)  

2 cups Mexican blend shredded cheese  

1 teaspoon ground cumin  

1 teaspoon chili powder  

Olive oil, salt, black pepper  

Sour cream, salsa, guacamole (for serving)  

Steps:

1. Prepare vegetables (using Geedel):  

   Wash and cut the red bell pepper, green bell pepper, and onion into chunks. Take out the Geedel Food Chopper and attach the dicing blade. Place the vegetable chunks in batches into the container and pulse 4–5 times until uniformly diced. 2. Cook the filling:

   Heat a tablespoon of olive oil in a skillet. Add the diced vegetables and sauté for 5–7 minutes until softened. Stir in the ground cumin and chili powder and cook for another minute to release the aromas. Add the shredded chicken and black beans, season with salt and black pepper, mix well, and remove from heat.

3. Assemble the quesadillas:  

   Preheat a large skillet or griddle over medium heat. On one half of a tortilla, spread 1/4 of the chicken and vegetable mixture and sprinkle 1/2 cup of shredded cheese. Fold the tortilla in half and press gently.

4. Cook:  

   Place the assembled quesadilla in the preheated skillet. Cook for 2–3 minutes per side until the tortilla is golden and crispy and the cheese inside is melted. Repeat with the remaining quesadillas.

5. Serve:  

   Cut the quesadillas into wedges and serve with sour cream, salsa, and guacamole. Pair with a simple green salad for a complete meal.
