Reuben Sandwich with Homemade Coleslaw

by geedelsales1 02 Dec 2025 0 comments

Craving a hearty hot sandwich on a cold afternoon? This classic Reuben paired with refreshing coleslaw is the perfect choice. My Geedel Vegetable Chopper shines in making the Russian dressing and the coleslaw, allowing this restaurant-quality treat to be easily recreated at home.

Ingredients:

Sandwich: 8 slices rye bread, 500g corned beef, 200g Swiss cheese, 1 can sauerkraut (drained)

Russian Dressing: 1/2 cup mayonnaise, 1/4 cup ketchup, 2 tbsp chopped dill pickles, 1 tbsp finely chopped onion, 1 tsp horseradish, 1 tsp Worcestershire sauce

Coleslaw: 1/4 red cabbage, 1/4 green cabbage, 1 carrot, 1/4 red onion

Coleslaw Dressing: 1/2 cup mayonnaise, 2 tbsp apple cider vinegar, 1 tbsp honey, 1 tsp yellow mustard, salt, black pepper

Detailed Steps:

1. Make the Russian Dressing:

Cut the onion and pickles into chunks. Using the Hand Vegetable Chopper with the dicing blade, place the onion chunks inside and press lightly for fine dice. Repeat with the pickles. Mix all dressing ingredients in a bowl and refrigerate.

2.Prepare the Coleslaw:

Wash the cabbages, carrot, and red onion. Switch to the fine shredding blade. This Onion Chopper excels not only with onions but also efficiently shreds cabbage. Shred the carrot first, then gently separate the shreds. Process the two cabbages and red onion similarly. The shredding function creates uniform, fine shreds that better absorb the dressing.

3.Mix the Slaw:

Place all shredded vegetables in a large bowl. In another bowl, whisk together the mayonnaise, vinegar, honey, mustard, salt, and pepper to make the dressing. Pour over the vegetables and toss thoroughly. Refrigerate for at least 1 hour to let flavors meld.

4.Assemble the Sandwiches:

Preheat a skillet or panini press. Spread Russian dressing on each slice of rye bread. Layer corned beef, drained sauerkraut, and Swiss cheese on half the slices, then top with the remaining bread slices (dressing-side down).

5.Grill and Serve:

Cook in a buttered skillet for 3-4 minutes per side until golden, or in a panini press until the cheese melts. Cut in half and serve with the chilled coleslaw.

Conclusion

Making a traditional Reuben sandwich is greatly simplified by the Geedel Vegetable Chopper, especially for preparing the finely shredded coleslaw and the ingredients for the dressing. Uniform cuts ensure perfect texture in every bite of the slaw, bringing homemade quality to a professional level.
