Apple Walnut Salad with Maple Mustard Dressing

In American cuisine, balance is also key, and a hearty main-course salad is an excellent choice to pair with richer dishes or serve as a lighter meal. This autumn-winter salad combines crisp, sweet apples, toasted walnuts, and robust cheese for rich layers of flavor and texture. Ingredients:

For the salad base:

1 head romaine lettuce

1 head red leaf lettuce

2 crisp apples (e.g., Honeycrisp)

½ cup walnut halves

2 grilled chicken breasts, sliced

For the Maple Mustard Dressing:

¼ cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon maple syrup

1 small garlic clove, crushed

Instructions:

1.  Prepare the apples and cheese (using Geedel):

    Wash and core the apples. Using the Geedel vegetable chopper with the coarse shredding blade, cut the apples into chunks and process into beautiful, thick julienne strips. Immediately place the apple strips in a bowl of cold water with a squeeze of lemon juice to prevent browning. Switch to the dicing blade, place the block of blue cheese into the container, and press lightly 1-2 times to create rustic, crumbled chunks. This hand-crumbled texture is far superior to pre-crumbled cheese.

2.  Prepare other ingredients:

    Wash the lettuce, dry it thoroughly (using a salad spinner is ideal), and tear it into bite-sized pieces. Toast the walnut halves in a dry skillet over medium-low heat for 3-5 minutes until fragrant. Let cool and roughly chop.

3.  Make the dressing:

    In a small jar or bowl, vigorously shake or whisk all dressing ingredients until emulsified.

4.  Assemble the salad:

    In a very large salad bowl, combine the lettuce, well-drained apple strips, most of the walnuts, and cheese crumbles. Add sliced grilled chicken if using.

5.  Serve:

    Just before serving, drizzle with the desired amount of maple mustard dressing and toss gently. Divide among plates, garnishing with the reserved walnuts and cheese.
