Mummy Stuffed Pumpkin Rice

This Halloween, create adorable pumpkin bowls filled with "mummy" fried rice! The Geedel Vegetable Chopper dices carrots and onions in 10 minutes for a quick festive meal. Savory rice pairs with sweet pumpkin in this fun handheld meal kids love—the perfect quick Halloween dinner for busy professionals.

Ingredients (Serves 2)

2 small Kabocha pumpkins

1 bowl of day-old rice

50g luncheon meat

¼ carrot

 ¼ onion

1 egg

20g green peas

1 tsp Korean gochujang

½ tsp light soy sauce

1 tbsp cooking oil

2 sheets of nori (for eyes)

30g shredded mozzarella cheese

Instructions

1. Prepare Pumpkin Bowls & Chop Ingredients

Wash the Kabocha pumpkins and slice off the top quarter to create lids. Scoop out the seeds (save them for roasting). Cut the carrot, luncheon meat, and onion into chunks, then place them together in the Geedel Vegetable Chopper using vegetable chopper mode (medium blade). Press down twice lightly to get even 1cm dices—prepping three ingredients at once saves time without mixing flavors. Transfer to containers.

2. Stir-Fry the Rice: Ready in 10 Minutes

Heat 1 tbsp oil in a pan over medium heat. Scramble the egg and set aside. In the same pan, sauté the carrot and onion dices for 2 minutes. Add luncheon meat dices and green peas, stir-frying for another minute. Add the day-old rice, breaking up any clumps. Mix in gochujang and soy sauce, stir-frying for 2 minutes until the rice is evenly coated. Return the scrambled egg to the pan, mix well, and turn off the heat.

3. Assemble the Pumpkin Bowls: Halloween Fun

Fill the pumpkin bowls with the fried rice. Top with shredded mozzarella and cover with the pumpkin lids. Bake in a preheated oven at 180°C for 15 minutes, until the cheese melts. Remove and decorate with nori-cut "eyes" and cheese strips arranged like "mummy bandages." The golden pumpkins, flavorful rice, and white cheese create an adorable and delicious presentation.
