Thai-Style Beef Salad
This dish, known as ‘Waterfall Salad,’ is celebrated for its bold, fresh, and perfectly balanced sweet, sour, and spicy flavors. Thinly sliced grilled beef is combined with a generous amount of fresh herbs and vegetables, then dressed with a zesty, tangy sauce. Your Geedel vegetable chopper can instantly prepare large quantities of herbs and vegetable strips, and quickly emulsify an authentic Thai dressing, allowing you to easily master complex Southeast Asian flavors at home.
Ingredients:
300g beef tenderloin or flank steak
1 cucumber
¼ red onion
1 carrot
Handful of fresh mint leaves
Handful of fresh cilantro leaves
For the dressing:
Juice of 2 limes
2 tablespoons fish sauce
1 tablespoon palm sugar or white sugar
1–2 bird's eye chilies
1 garlic clove
For garnish:
Crushed roasted peanuts
Toasted rice powder (optional)
Instructions:
1. Prepare vegetables and herbs:
Cut the cucumber, carrot, and red onion into large chunks. Using the chopping blade of your Geedel manual food chopper, process them into fine strips.
Place all the vegetable strips into the salad spinner basket and give the handle a quick spin to lightly remove excess moisture, enhancing crispness. Transfer to a large salad bowl.
Place the mint and cilantro in the container (using the chopping blade) and pulse a few times until coarsely chopped. Add to the bowl.

2. Make the flavorful dressing:
Empty the container and install the chopping blade. Add the bird's eye chilies and garlic, then turn the handle to finely chop.
Switch to the mixing paddle. Add lime juice, fish sauce, and palm sugar. Close the lid tightly and turn the handle until the sugar dissolves and the dressing is well combined.
3. Cook the beef:
Grill or pan-sear the steak to your preferred doneness (medium-rare to medium is recommended). Let it rest for 5 minutes, then slice thinly against the grain.
4. Combine and serve:
Add the warm beef slices to the vegetable bowl. Pour over the desired amount of Thai dressing and toss gently to coat evenly.
Plate the salad, sprinkle with crushed roasted peanuts and toasted rice powder for added texture. Serve immediately.
Summary:
This salad bursts with the vibrant freshness of Southeast Asia. The Geedel food chopper is the ultimate tool for handling large quantities of herbs and creating complex-flavored dressings. It ensures herbs are chopped without being over-processed and powerfully emulsifies all dressing ingredients, giving your homemade Thai salad the authentic, palate-awakening flavor it deserves.
