Upgraded Grilled Cheese Sandwich with Tomato Soup
On a rainy lunch break, kids crave a comforting meal that warms both body and soul. Golden, crispy grilled cheese sandwiches paired with tangy tomato soup are a timeless combination. Using the Geedel hand vegetable chopper, you can quickly prepare a tomato soup with vegetable pieces, adding nutritious layers to this classic pairing.
Ingredients:
For the sandwiches:
8 slices white or sourdough bread
Butter
400g mixed cheeses (cheddar, mozzarella, Monterey Jack), shredded
For the tomato soup:
1 onion
2 garlic cloves
2 cans (800g total) whole tomatoes
1 cup vegetable broth
½ cup cream
2 tablespoons olive oil
1 teaspoon dried basil
Sugar, salt, black pepper
Secret touch:
¼ cup grated Parmesan cheese (for sprinkling)
Instructions:
1. Prepare the soup vegetables:
Peel and chop the onion. Using the onion chopper, place onion chunks in the container and press to dice finely. Crush the garlic with a knife. The design of this tool minimizes discomfort when handling pungent ingredients.

2. Make the tomato soup:
Heat olive oil in a soup pot and sauté the diced onion until translucent. Add garlic and dried basil, cooking for 30 seconds. Add the whole tomatoes (crushed by hand) and broth. Bring to a boil, reduce heat, and simmer for 15 minutes. Use an immersion blender to puree until smooth. Stir in cream and season with salt, pepper, and a pinch of sugar. Keep warm.
3. Assemble the sandwiches:
Butter one side of each bread slice. Place the unbuttered side up, add a generous amount of shredded cheese, and top with another slice of bread, buttered side facing out.
4. Cook the sandwiches:
Preheat a skillet or panini press over medium heat. Cook the sandwiches for 3–4 minutes per side, pressing gently, until the bread is golden and crispy and the cheese is fully melted.
5. Serve:
Ladle the tomato soup into bowls and sprinkle with Parmesan and fresh basil leaves. Cut the sandwiches diagonally and serve alongside the hot soup. Dipping the crispy sandwich into the rich soup is a delightful experience.
Summary:
This classic lunch combo is elevated by homemade tomato soup. The Geedel food chopper quickly processes onions for a more flavorful and natural soup base. Its ease of use brings a restaurant-quality touch to everyday lunches.
