Southwestern Beef Rice Bowl

Instructions:
1. Prepare guacamole ingredients (using Geedel):
Cut the red onion and tomato into chunks. Using the hand vegetable chopper with the dicing blade, place the red onion chunks in the container and press lightly 3–4 times to get fine dice. Repeat with the tomato. This food chopper handles small batches quickly, making it perfect for sauces and dips.

2. Make the guacamole:
In a bowl, mash the avocado flesh into a coarse paste. Add the diced onion, diced tomato, cilantro leaves, and lime juice. Season with salt and mix gently, keeping some texture.
3. Prepare remaining toppings:
Use the dicing blade to dice the tomato and red onion (for fresh toppings). Switch to the chopping blade to chop cilantro. If using fresh corn, cut the kernels off the cob and set aside.
4. Cook the rice:
In a pot, combine the rice, chicken broth, and diced green chilies. Bring to a boil, then reduce heat, cover, and simmer for 15–20 minutes until the liquid is absorbed. Remove from heat and stir in cilantro and lime juice.
5. Cook the beef:
In a skillet, brown the ground beef. Add taco seasoning and water, and cook for 5 minutes until the sauce thickens.
6. Assemble and serve:
