South African Bobotie
South Africa's national dish, Bobotie, is a uniquely flavored baked minced meat casserole. ¼ cup raisins
2 bay leaves
Salt and pepper
For the Egg Custard Topping:
1 cup milk
2 eggs
Salt
Pinch of turmeric (for color)
Instructions:
1. Prepare the flavored meat base:

Squeeze the soaked bread to remove excess milk (reserve the milk). Tear the bread into small pieces and add it to the meat mixture. Stir in the apricot jam, raisins, bay leaves, salt, and pepper, along with a little water. Simmer over low heat for about 10 minutes until the flavors meld and the liquid reduces. Remove the bay leaves.
3. Prepare the topping and bake:
Press the meat mixture firmly into a baking dish. In the food chopper container with the mixing paddle, combine the reserved milk, eggs, a little salt, and turmeric. Mix until smooth to create the custard topping. Pour evenly over the meat surface.
Bake in a preheated oven at 180°C for 30–40 minutes, until the custard is set and turns a beautiful golden brown.
