Italian Ham and Cheese Croquettes

Golden and crispy on the outside, with melted cheese and savory ham on the inside—these Italian croquettes are the perfect appetizer or party snack. For the filling to hold its shape, the ingredients need to be finely processed. Your Geedel hand vegetable chopper quickly transforms potatoes, ham, and cheese into a uniform mixture and helps ensure the breadcrumb coating adheres evenly.

Ingredients:  

500g potatoes, boiled and peeled  

100g Italian cured ham (Prosciutto)  

150g mozzarella cheese, cut into small cubes  

2 tablespoons grated Parmesan cheese  

1 egg yolk  

Handful of fresh parsley  

For coating: flour, beaten eggs, breadcrumbs  

Vegetable oil (for frying)

Instructions:

1. Prepare the smooth filling:  

   Cut the boiled potatoes, ham, and parsley into large chunks. Place them in the Geedel manual vegetable chopper with the chopping blade installed.  

   Close the lid tightly and turn the handle continuously until all ingredients are finely chopped and well combined, resembling a coarse mashed potato mixture. Transfer to a bowl.

2. Mix and season:

   Clean the container and switch to the mixing paddle attachment. Add the mozzarella cubes, grated Parmesan, and egg yolk. Use the mixing paddle to stir until evenly combined. Season with salt and pepper (note that the ham is already salty).

3. Shape and coat:

   Lightly wet or oil your hands, then take a portion of the mixture and shape it into an oval or cylinder.  

   Coat each croquette in the following order: flour → beaten egg → breadcrumbs.

4. Fry:

   Heat oil in a deep pot to 170°C. Fry the croquettes in batches for 3–4 minutes, until golden brown and crispy all over.  

   Drain on paper towels and serve hot for the perfect cheese pull.
