Mexican Fajitas

Craving Mexican flavors but short on time? These fajitas use pre-sliced bell peppers and onions, combined with quick-cooking meat strips and seasoning, for a table-ready meal in about ten minutes. The Geedel vegetable chopper helps prepare plenty of vegetable strips on the weekend, so on weekdays all you need is a quick stir-fry.

Ingredients (serves 4):

Frozen vegetable strips: 2 bell peppers (red & yellow), 1 large onion (pre-prepped)

Protein choice: 400g chicken breast or steak (cut into strips)

Seasoning: 2 tbsp fajita seasoning (or homemade: 1 tbsp chili powder, 1 tsp cumin, ½ tsp garlic powder, etc.)

To serve: 8 tortillas, sour cream, salsa, guacamole, shredded cheese

Marinade: 2 tbsp olive oil, 1 tbsp lime juice

Weekend Prep Steps:

1. Prep peppers and onions (using Geedel chopper):

   Deseed and quarter bell peppers; peel and halve the onion. Fit the coarse shredding blade into your hand vegetable chopper. Process peppers into even strips. Repeat with onion. This manual chopper’s coarse shred function is ideal for fajita-style texture.

 

2. Portion seasoning packs:  

   Divide vegetable strips into freezer bags (about 2 cups each). Portion fajita seasoning into small bags (1 tbsp each). Place both in a larger freezer bag, seal, and label.

Weekday Cooking Steps:

1. Prep protein (6:00 PM):  

   Toss chicken or beef strips with olive oil and lime juice; let marinate 5 minutes. Take veggie pack and seasoning pack from freezer.

2. Quick stir-fry (5 minutes):  

   Heat a skillet or wok over high heat. Stir-fry meat 2–3 minutes until surface is seared. Add frozen veggie strips (no need to fully thaw) and seasoning. Continue stir-frying 4–5 minutes until veggies are heated but still crisp.

3. Warm tortillas (simultaneously):  

   In a dry pan, heat tortillas 15 seconds per side, or wrap in a damp towel and microwave 30 seconds.

4. Assemble and serve (2 minutes):  

   Transfer fajita mix to a warm plate. Serve with tortillas and assorted toppings for DIY wrapping.

Pro Tips:

- A cast-iron skillet adds better char and flavor.

- Meat can be marinated and frozen ahead for a complete meal kit.

- Avoid over-thawing veggie strips to maintain crispness.
