Spinach and Feta Mini Phyllo Triangles

These golden, crispy, savory little triangles are perfect finger food for parties or afternoon tea. The classic Mediterranean combination of spinach and feta cheese is always a delight. Your Geedel hand chopper quickly chops the spinach and thoroughly removes excess moisture while evenly blending the feta and herbs—ensuring each triangle is generously filled without making the pastry soggy.

Ingredients:  

1 package (about 200g) frozen chopped spinach, thawed  

150g feta cheese  

100g ricotta or cream cheese  

1 egg  

¼ onion  

2 tablespoons fresh dill or mint  

Salt, black pepper, ground nutmeg to taste  

1 package frozen phyllo dough, thawed as directed  

Melted butter (for brushing)  

Instructions:

1. Prepare the filling:  

   Place thawed spinach in a fine-mesh sieve and press firmly to remove all excess water—this is key to a successful filling.  

   In the Geedel manual food chopper with the chopping blade, combine the drained spinach, feta cheese, onion chunks, and herbs. Turn the handle until all ingredients are evenly mixed but still slightly coarse in texture.

2. Mix the filling:

   Transfer the mixture to a bowl. Add ricotta cheese, egg, salt, pepper, and a pinch of nutmeg.  

   Using the attached mixing paddle, stir until everything is fully combined.

3. Assemble and bake:  

   Follow the phyllo dough package instructions: cut the sheets into strips, brush with melted butter, place a spoonful of filling at one end, and fold into triangles.  

   Place the triangles on a baking sheet lined with parchment paper and brush the tops with butter.  

   Bake in a preheated oven at 190°C for 20–25 minutes, until the pastry is flaky and golden brown.

4. Serve:

   Enjoy warm after slightly cooling.
