Thai Green Papaya Salad

Ingredients

1/2 green papaya (approx. 200g, choose firm fruit for crispness)

1 small handful long beans (approx. 50g, ends trimmed)

4 small tomatoes (approx. 80g, choose tangy-sweet variety)

1 lime (juiced + 1 slice reserved for garnish)

2 cloves garlic

2 bird's eye chilies (adjust to taste)

3 fresh shrimp (cooked, peeled, optional)

1 tbsp fish sauce

1 tsp palm sugar (or granulated sugar)

20g crushed roasted peanuts

1 small sprig cilantro (leaves reserved for garnish)

Steps

1.  Shred the Papaya: Achieve "Hair-Thin Strands" with the Vegetable Chopper
