Mediterranean Roasted Vegetable Focaccia Sandwich

Using a homemade herb focaccia bread filled with colorful roasted vegetables, creamy feta cheese, and a rich herb sauce, you can create a healthy main dish that’s as beautiful as a work of art. Your Geedel hand vegetable chopper quickly chops herbs for the bread dough and sauce, and effortlessly cuts vegetables into uniform slices for even roasting.

Ingredients:  

For the easy focaccia:  

3 cups high-gluten flour  

1 cup warm water  

2 teaspoons active dry yeast  

1 teaspoon sugar  

1 teaspoon salt  

5 tablespoons olive oil  

Handful of fresh rosemary  

For the roasted vegetables:  

1 zucchini  

1 red bell pepper  

1 eggplant  

1 red onion  

Olive oil, salt, and pepper  

For the herb sauce:  

1 cup fresh basil leaves  

¼ cup grated Parmesan cheese  

1 garlic clove  

¼ cup pine nuts  

¼ cup olive oil  

For assembly:  

Crumbled feta cheese  

Lettuce leaves  

Instructions:

1. Make the herb focaccia dough:  

   Remove rosemary leaves and quickly chop them using the Geedel manual food chopper with the chopping blade. Combine with flour, yeast, sugar, and salt in a mixing bowl.  

   Use the mixing paddle attachment to blend the dry ingredients while gradually adding warm water and 3 tablespoons of olive oil. Knead into a dough, let rise until doubled in size. Spread on a baking sheet, dimple the surface, drizzle with the remaining olive oil, sprinkle with sea salt, and bake until golden.

2. Prepare the roasted vegetables:

   Cut all vegetables into large chunks. Using the hand chopper with the chopping blade, rotate the handle to cut the vegetables into even pieces. Toss with olive oil, salt, and pepper, then roast until caramelized at the edges.

3. Make the quick herb sauce:  

   Empty the container (no need to wash). Add basil, Parmesan, garlic, and pine nuts. Chop finely with the chopping blade. Switch to the mixing paddle and, while running, slowly drizzle in olive oil through the feed opening to emulsify into a smooth sauce.

4. Assemble the sandwich:

   Slice the focaccia horizontally. Spread the herb sauce on the bottom layer, then layer with lettuce, roasted vegetables, and crumbled feta cheese. Top with the other half, press firmly, and cut into portions.
