Moroccan Lamb with Apricots and Couscous

Slow-cooked lamb in warm North African spices, paired with sweet dried apricots and chickpeas, served over fluffy couscous for an exotic flavor journey. Your Geedel food chopper quickly grinds spices and nuts into a smooth paste and prepares the complex seasoning base, bringing this wonderfully aromatic main dish within easy reach.

Ingredients:  

600g lamb shoulder, cut into cubes  

1 onion  

2 garlic cloves  

1 small piece ginger  

1 tablespoon Ras el Hanout Moroccan spice blend (or a mix of turmeric, cinnamon, cumin, ginger powder, etc.)  

1 cup dried apricots, halved  

1 can (400g) chickpeas, drained  

3 cups lamb or chicken broth  

2 cups couscous  

Handful of fresh cilantro  

Sliced almonds, toasted  

Olive oil, salt  

Instructions:

1. Make the spice-nut paste:  

   Cut onion, garlic, and ginger into chunks. Place them in the Geedel manual vegetable chopper (with the chopping blade installed). Add the spice blend and a small handful of sliced almonds (about ¼ cup). Turn the handle continuously until a smooth paste forms.

2. Braise the lamb:  

   In a stew pot, brown the lamb cubes in olive oil. Add the spice paste and cook for 2 minutes until fragrant. Pour in the broth and add the apricots. Bring to a boil, then reduce heat, cover, and simmer for about 1.5 hours until the lamb is tender.  

   Stir in the chickpeas and simmer for another 15 minutes. Season with salt.

3. Prepare the couscous:  

   Following package instructions, pour boiling water or broth over the couscous, cover, and let stand for 5 minutes. Fluff with a fork.

4. Serve:  

   Spread the fluffy couscous on plates or a large platter. Top with the braised lamb, apricots, and chickpeas, spooning some of the sauce over everything. Garnish with chopped cilantro and toasted almond slices.
